Xanthan gum vs psyllium husk

Both raise viscosity and hold gas. Only one of them gives a gluten-free mixture enough cohesion to be handled, and it charges for it in crumb texture.

The short answer

Xanthan is a thickener used at fractions of a percent; psyllium is a fibre used at several times that, forming a gel cohesive enough to shape by hand. Psyllium buys handling and pays in a harder, gummier crumb with coarser cells. Neither replaces gluten; both address gas retention and nothing else gluten did.

Why the figures should be read as a direction, not a dose

The numbers above come from a single controlled formulation with one flour base. Gluten-free systems interact strongly enough that a result from one blend does not transfer confidently to another.

What does transfer is the direction: psyllium hardens and gums the crumb while improving handling, and xanthan past its window costs volume. Anyone quoting a specific quantity for either — including BakeHQ — would be going beyond what has been measured.
