Cream acidified and drained rather than cultured — which makes it far richer and far less tangy than cream cheese, and not a swap for it.

Also called italian cream cheese (US) — A marketing description rather than an equivalence. It is made from cream, not milk, and it is not soured in the same way.

Mascarpone is made by warming cream with an acid until it thickens, then draining it. There is no starter culture and no ripening, which is why it tastes of cream with only a faint sharpness where cream cheese tastes distinctly of cheese.

Because it starts from cream rather than milk it is much higher in fat and lower in water than cream cheese, and that reverses several of cream cheese's baking behaviours. An icing made with mascarpone is firmer, not softer. Folded into whipped cream it stabilises the foam rather than loosening it, which is why it turns up in fillings that have to stand.

It also splits more readily than cream cheese under a mixer, because there is more fat to come out of suspension and less protein holding it. Beating it hard from cold is the usual way that happens.

What changes if it is left out

Cream cheese is the common substitute and changes both the flavour and the texture: more acid, more water, a softer result. Full-fat crème fraîche is closer on richness and considerably more sour. Neither is a like-for-like swap in anything where the mascarpone was supplying structure.

Storage and deterioration

Refrigerated, well sealed, and used quickly once opened. It picks up other flavours readily and it does not freeze — the fat separates and the texture does not recover.
