Cream cheese
A fresh soft cheese that is more than half water, which is the single fact that explains how every icing and cheesecake made with it behaves.
Also called soft cheese (UK); full fat soft cheese (UK); spreadable cream cheese (INTERNATIONAL) — The tub product. It carries more water and often added gums, and it is not interchangeable with the block in baking.
Cream cheese is milk and cream acidified into a soft curd and not aged. In baking it is doing two jobs at once and they pull against each other: it brings a lactic tang that sugar cannot mask, and it brings a great deal of water into preparations that would otherwise be nearly all fat.
That water is why a cream cheese frosting is softer than a buttercream at every temperature, why it does not hold a sharp piped edge, and why adding icing sugar to loosen batches eventually stops helping. It is also why a baked cheesecake sets the way it does — the water is held by coagulated protein rather than by starch or gelatine, which is what gives a good one its particular dense, slightly springy set.
The block and the tub are different products. Spreadable cream cheese has been formulated to stay soft out of the fridge, usually with more water and stabilising gums, and swapping one for the other in an icing or a cheesecake changes the result rather than the convenience.

Water content
Substantially more than half by weight in a full-fat block — a much wetter ingredient than butter, which is roughly four-fifths fat.

What changes if it is left out
There is no swap that keeps both the tang and the set. Mascarpone is richer and much less acidic, so an icing made with it is stiffer and tastes of cream rather than of cheese. Thick yoghurt or quark bring the acidity and more water still, which makes a looser icing and a wetter cheesecake.

Storage and deterioration
Refrigerated and used by its date; it is a fresh cheese rather than a preserved one. It does not freeze well on its own — the curd separates and weeps on thawing — though it survives freezing inside a baked cheesecake.
