Honey
A concentrated sugar syrup that is hygroscopic, acidic and browns early — three reasons it is not a drop-in replacement for sugar.

Honey is mostly fructose and glucose with a small amount of water, and every one of its baking behaviours follows from that.
It is strongly hygroscopic, so it holds water in the finished bake and keeps it soft for longer. It is acidic, so it reacts with bicarbonate of soda and shifts the leavening balance of a formula built around baking powder. Its fructose browns at a lower temperature than sucrose does, so honey bakes darker and faster and can be well coloured before the centre is set.
Replacing sugar with honey by weight therefore changes four things at once: sweetness, moisture, colour and pH. None of that is a reason not to use it — it is a reason not to treat the swap as arithmetic.
What changes if it is left out
There is no single replacement. Sugar restores the sweetness and the structure sugar provides, and leaves the bake paler, drier-keeping and less acidic. A different syrup restores the moisture behaviour but brings its own colour and flavour.

Why honey’s water does not make a formula wetter
Honey contains water, and adding honey does not hydrate a dough. The sugars in it are hygroscopic enough to hold that water and to compete for whatever else is present, so a honey-sweetened dough often behaves stiffer than its total liquid suggests.
This is the clearest everyday example of BakeHQ’s distinction between moisture content and functional hydration. The water is in the formula; it is not available to do the job water does.

Hygroscopic sugars hold water in the finished crumb, which is why honey-sweetened bakes keep soft markedly longer than sucrose-sweetened equivalents.

Hydration
The same hygroscopicity that keeps a honey cake soft for a week is competition for free water while the dough is being mixed. It is the reason honey is recorded as contributing water and as taking it away at the same time — both are true and they act at different stages.
