Honey vs maple syrup
Two liquid sweeteners that swap easily on the spoon and not in the oven, because only one of them holds water and browns early.
The short answer
Both are mostly sugar and water and they are not equivalent in a bake. Honey is largely invert sugar — glucose and fructose separated — which makes it markedly hygroscopic and markedly quick to brown, so a honey cake is moister, darker, and keeps longer than the same cake made with sugar. Maple syrup is largely sucrose with a higher water content and a more delicate flavour, so it behaves closer to a dilute sugar syrup and browns less aggressively. Both are wetter and sweeter per gram than granulated sugar, so substituting either for a dry sugar means reducing the other liquid and usually the oven temperature. Golden syrup sits between them, and is the closest ordinary substitute for honey in a British recipe.

Why maple syrup's flavour disappears and honey's does not
One of the commonest disappointments in baking is an expensive maple syrup that cannot be tasted in the finished cake.
Maple's characteristic flavour comes largely from volatile compounds produced during boiling, and volatiles leave during a bake. Honey's flavour is carried by less volatile compounds and by the browning its invert sugars accelerate, so it survives — and in some cases intensifies, because the browning it causes is itself a flavour.
The practical consequence is that maple syrup earns its place where it is not baked hard: in a glaze added late, in a filling, in an icing, or in something baked low and short. Used in a long, hot bake it is an expensive way of adding sweetness and water.
