Quiche is watery or did not set

Wet ingredients went into the filling raw

Very common

Most vegetables are mostly water held inside cell walls. Heat breaks those walls down and the water leaves, and in an open case it has nowhere to go but into the custard around it. That both dilutes the egg — pushing the mixture toward being too lean to set — and leaves free liquid sitting in the base. Spinach, mushrooms, courgette, tomato and onion are the usual offenders, and the amount involved is far larger than it looks before cooking.

What to change

  • Cook wet vegetables before they go into the filling

    Saute or roast mushrooms, courgette, onion, tomato or spinach until they have given up their water and it has evaporated, then drain and cool them before adding. Squeeze cooked spinach hard — it holds far more than it appears to.

    Quiche and any open savoury tart with a custard filling.

    Trade-off: An extra pan and ten minutes, and the vegetables lose a little of their fresh character.

There was not enough egg for the amount of liquid

Common

Setting depends on enough egg protein being present to form a network that spans the whole mixture. Diluted too far, the protein sets in isolated regions rather than continuously, and the result never firms up however long it is baked — it simply dries at the edges while the middle stays liquid. Adding cream or milk to a fixed number of eggs, or scaling a filling up to a larger dish without scaling the eggs, are the ordinary routes into it.

What to change

  • Check the egg against the liquid before scaling anything

    Work out roughly how much liquid the recipe carries per egg, and keep that proportion when moving to a different dish. If a filling is being stretched to fill a larger tin, scale the eggs with the cream rather than only topping up the liquid.

    Quiche, custard tart, and any filling being adapted to a tin it was not written for.

    Trade-off: More egg makes a firmer, more savoury set — the trade is texture, not success or failure.

The custard was taken past the point where it set

Very common

A baked custard sets when egg protein unfolds and links into a network that holds the liquid. Heating past that point makes the network contract further and tighten, and the water it was holding is forced out. The visible result depends on how far it went: first a weeping, watery layer, then a grainy or curdled texture, then a rubbery, bouncy set. This is why a watery quiche and a rubbery quiche can be the same fault at two severities, and why more baking makes both worse rather than better.

What to change

  • Take the custard out while the centre still wobbles

    Look for the edges set and a circle at the centre — roughly the size of a coin for a quiche, a little larger for a cheesecake — that still moves as one mass when the dish is nudged. It should wobble like set jelly, not ripple like liquid. Take it out at that point and let it finish on the bench.

    Trade-off: It requires judging a moving surface rather than following a time, and an oven that runs hot will reach it sooner than any recipe says.

Preventing it next time

  • Cook and drain wet vegetables before they go anywhere near the case.
  • Keep the egg in proportion to the liquid when changing dish size.
  • Take it out while the centre still wobbles — a custard that weeps has been baked too long, not too little.

Watery and not-set are two different faults that look the same on the plate

Both give a wet slice, and the fix for one makes the other worse.

If the filling SET and then water came out of it, it was overbaked. The egg network tightened past the point where it could hold its liquid and squeezed it out. Baking it longer next time will produce more water, not less.

If the filling NEVER set, there was either too much liquid for the egg or too much water arriving from the filling. That one genuinely does need more setting power — more egg, or less water going in.

The question that separates them is whether the liquid is sitting beside a set custard or is the custard.
