The starch was never brought fully to the boil

Common

Cornflour thickens as its starch gelatinises, and egg yolks contain an enzyme that breaks starch down. That enzyme is destroyed by heat, but only once the mixture has actually boiled — so a pastry cream taken off at first thickening still carries active enzyme, which digests the starch over the following hours and turns a set cream runny in the fridge. Boiling for a short period after thickening destroys it, which is why the instruction to boil is not optional and why the failure appears later rather than at the time.

What to change

  • Bring it to a boil and hold it briefly

    Once the cream has thickened, keep it over the heat, stirring constantly, until it bubbles properly, and hold it there for a short period rather than removing it at first thickening. Stir into the corners of the pan throughout. If it looks thick before it boils, it is not finished.

    Any starch-thickened egg custard: pastry cream, crème pâtissière, some pie fillings. Not applicable to custards set by egg alone, which must NOT boil.

    Trade-off: The line between boiled and scrambled is narrow, and it needs constant attention rather than a timer.

The egg coagulated into lumps

Common

Egg protein sets irreversibly over a narrow temperature range. Pouring hot milk straight onto yolks, or leaving the pan unstirred where it is hottest, takes part of the mixture through that range before the rest has warmed — so it sets into lumps suspended in liquid rather than thickening smoothly. Tempering, and stirring into the corners of the pan, exist to keep the whole mixture moving through the range together.

What to change

  • Temper the eggs, and strain at the end

    Pour the hot liquid onto the yolks slowly while whisking, rather than the other way round, so the yolks warm gradually instead of meeting boiling liquid at once. Return to the pan and stir constantly, reaching the corners. Pass the finished cream through a sieve — professional practice does this as a matter of course, and it removes the small amount of set protein almost every batch contains.

    Pastry cream, crème anglaise, curds and any egg-thickened mixture cooked over direct heat.

    Trade-off: Adds a step and a sieve to wash.

Preventing it next time

  • Boil it. Taking a pastry cream off at first thickening leaves an enzyme in the yolks that digests the starch overnight, which is why a cream that set perfectly can be liquid by morning.
  • Temper the eggs — pour the hot liquid onto them rather than the reverse — and stir into the corners of the pan.
  • Strain the finished cream as a matter of course. Professional practice does, and it removes the small amount of set protein almost every batch contains.
  • Cover the surface directly while cooling, so a skin cannot form and later break up into lumps.
