The batter was folded past the point of flow

Very common

The meringue supplies every bubble a macaron shell will ever contain, and macaronage removes some of them on purpose so the batter levels. Past that point each further fold removes bubbles the shell needed. A batter that runs freely spreads on the tray instead of holding a disc, and the foam that would have expanded and pushed the shell upward off the tray is largely gone — so the shell bakes flat and wide, without feet.

What to change

  • Fold to the ribbon, and test before piping the whole tray

    Fold, then lift the spatula and let the batter fall back. It should run in a thick continuous ribbon and the trace it leaves should sink back into the surface in roughly ten to twenty seconds. Batter that breaks into lumps needs more folding; batter that vanishes immediately has had too much. Pipe one shell and watch it: if the peak from the tip settles flat on its own, the batter is right.

    Every macaron batch. The number of folds depends on the meringue, the bowl and the spatula, so a count copied from a recipe is not transferable.

    Trade-off: Costs a minute, and the test itself deflates a small amount of batter.

The meringue was not whipped to a firm enough peak

Common

A macaron contains no flour, no chemical leavener and no whole egg — the whipped white is the entire structure. A meringue taken only to soft peaks has larger, less stable bubbles, and macaronage then removes them faster than it removes those in a firm foam. The batter loosens suddenly rather than gradually, which is also why an underwhipped meringue is so often overmixed as well: the window between stiff and runny is much narrower.

What to change

  • Whip the meringue until the peak stands without drooping

    Whip until lifting the whisk brings up a peak that holds its shape and points straight rather than curling over. The bowl should be clean and dry and free of any trace of yolk, since fat prevents the foam building at all. Add the sugar gradually once the whites are frothy rather than at the start.

    Macarons, and any meringue that will be folded into something else.

    Trade-off: Whipping past this point is a real fault of its own — a dry, grainy foam that will not fold in smoothly.

The shells went in before a skin had formed

Very common

A piped shell left to stand loses surface moisture and forms a skin that is dry to the touch. That skin is what makes a macaron behave differently from any other piped meringue: it resists the steam generated underneath, and the steam takes the only path left to it, lifting the shell away from the tray at its edge. That lift is the foot. Without a skin the surface is the weakest point, so the steam goes straight up and splits it. Humidity is the usual reason a skin does not form in a normal resting time — the air is already close to holding as much water as it can, so the surface has nowhere to lose it to.

What to change

  • Rest the piped shells until they are dry to a light touch

    Leave the piped trays uncovered and touch the edge of one shell lightly. When no batter transfers to your finger and the surface feels matt rather than tacky, the skin has formed. In a humid kitchen this can take far longer than a recipe's stated time, or fail to happen at all — running an extractor, a dehumidifier or simply not making macarons on a wet day is more reliable than waiting longer.

    Any macaron, and any piped meringue that is meant to rise away from the tray.

    Trade-off: Resting too long is also possible: a shell left for hours can dry unevenly and bake with a dull, blotchy surface.

The oven runs cooler than its dial

Common

Domestic ovens are frequently some way from their dial setting, and the discrepancy is usually invisible because it affects every bake consistently. A cool oven delays protein coagulation and starch gelatinisation, extending the window in which a cake can collapse and leaving crusts pale and bases damp.

The variable underneath

  • Oven temperature

    How to tell after the fact: A bake that consistently needs longer than stated and comes out pale is the signature of an oven running cool. One that browns before the centre sets is running hot. Several unrelated recipes failing the same way is the strongest single indicator.

What to change

  • Verify the oven temperature with a thermometer

    Put an oven thermometer in the middle of the oven, preheat fully, and compare the reading with the dial. Note the offset and set the dial to compensate. Check again after twenty minutes, since some ovens overshoot before settling.

    Any oven whose bakes are consistently under- or over-coloured. Fixes an entire class of faults that otherwise look like recipe problems.

    Trade-off: Needs an inexpensive thermometer, and the offset can vary across the cavity.

Preventing it next time

  • Test the batter for the ribbon rather than counting folds, and stop at the first point it behaves.
  • Whip the meringue to a peak that stands straight before any almond goes in.
  • Rest until touch-dry, every time.

Flat and footless are usually the same fault

A foot is the shell being pushed upward off the tray by steam that cannot escape through the top. Anything that removes the push, or removes the resistance, removes the foot.

Overmixing removes the push: the bubbles that would have expanded are gone, so there is nothing to lift. A missing skin removes the resistance: the steam escapes upward instead, and the shell has no reason to rise at its edge. Both produce a flat shell, and the batter test tells them apart before the tray is ever piped.

    Steam has to be generated quickly to lift the shell; a slow oven dries it instead.
