Too much egg was beaten into the paste

Common

Choux is loosened with egg until it is slack enough to expand and stiff enough to hold its piped shape. Past that point the paste spreads on the tray, so the steam generated in the oven escapes sideways from a thin sheet rather than inflating a mound. The quantity of egg cannot be specified by count, because it depends on how much water evaporated while the paste was cooked.

What to change

  • Add the last of the egg by feel, not by count

    Beat in most of the egg, then add the remainder a little at a time, testing after each addition. Correctly loosened choux drops from the spoon in a thick V and a piped shape holds its ridges. A recipe’s egg count is a starting estimate, because the quantity depends on how much water evaporated while the paste cooked.

    Trade-off: A paste that has had too much egg cannot be corrected by adding flour; it has to be started again.

The oven was too cool for steam leavening

Common

Choux is raised by steam alone. Steam has to be generated faster than the structure sets, or the pastry cooks without expanding. A cool oven produces steam gradually, and the egg protein and gelatinised starch firm up around a paste that never inflated.

  • Start hot, then dry the shells out before removing them

    Bake hot enough to generate steam quickly, and do not open the door while the pastry is rising. Once risen and coloured, continue until the shells feel light and sound hollow — piercing them to vent steam helps them dry. A shell removed while soft will collapse on the rack.

The oven was opened while the choux was rising

Occasional

Unlike a cake, a choux has no leavener still to act and no structure yet to hold it. Opening the door removes both the heat generating the steam and the steam itself, and a partly-risen choux collapses immediately and does not recover.

    Bake hot enough to generate steam quickly, and do not open the door while the pastry is rising. Once risen and coloured, continue until the shells feel light and sound hollow — piercing them to vent steam helps them dry. A shell removed while soft will collapse on the rack.

The choux came out before it had dried

Common

A risen choux is inflated but soft, and its walls are still largely water. It has to stay in the oven long enough to dry into a rigid shell. Removed before that, it deflates as it cools — which reads as a failure to rise even though the rise happened.

    Bake hot enough to generate steam quickly, and do not open the door while the pastry is rising. Once risen and coloured, continue until the shells feel light and sound hollow — piercing them to vent steam helps them dry. A shell removed while soft will collapse on the rack.

Preventing it next time

  • Add the last of the egg gradually and stop by feel: the paste should fall in a thick V and a piped shape should keep its ridges.
  • Bake hot enough to generate steam quickly — choux has no leavener to fall back on if the steam arrives slowly.
  • Do not open the door while it is rising. There is nothing in a choux that can recover from that.
  • Dry the shells out fully before removing them, and pierce them to let steam escape if they are to be filled.

Why the egg cannot be specified by count

Every choux recipe gives a number of eggs and every careful one says to add the last by feel. Both are right.

The paste is cooked on the hob to drive off water, and how much leaves depends on the pan, the heat and how long it was stirred. A paste that lost more water needs more egg to reach the same consistency; one that lost less needs less. Two cooks following the same recipe can legitimately need different quantities.

This is why choux is the pastry where a recipe helps least. The endpoint is a consistency, and no ingredient list can specify it.
