Stretch and fold
Developing a dough during bulk fermentation by stretching and folding it at intervals, instead of kneading it all at once.
Instead of concentrating all mechanical work at the start, the dough is stretched and folded over itself two or three times during bulk fermentation, at intervals.
The technique exists mainly because very wet doughs cannot be kneaded conventionally — they will not hold together or leave the hands. Folding develops them effectively and gently, and it also redistributes the dough’s temperature and its gas.
A useful side effect is that each fold is a check-in. A baker folding a dough three times has felt it three times and knows how fermentation is progressing, which is information a single early kneading does not provide.
