Autolyse
Resting flour and water together before adding salt and leaven, allowing hydration and enzyme activity to begin development without work.
An autolyse is a rest — flour and water mixed to a rough mass and left alone, conventionally without salt or leaven, before the dough is completed.
During the rest, flour hydrates fully and the flour’s own enzymes begin breaking down starch and protein. Gluten develops without any mechanical work at all. A dough that has been autolysed is noticeably more extensible and requires less kneading to reach the same point.
The conventional exclusion of salt is because salt restrains enzyme activity and tightens the dough, and the exclusion of leaven is to avoid fermenting during a step whose purpose is hydration. Both exclusions are widely practised; the size of the benefit from each is asserted more often than it is measured.

How long — and why every answer you find is different
Published autolyse times range from twenty minutes to overnight, and the range is real rather than sloppy. Two different things are happening and they run on different clocks.
HYDRATION is fast. The flour taking up water is largely done within twenty to thirty minutes for a white flour, and it is most of the benefit: the dough becomes extensible, easier to work, and needs less mixing afterwards.
ENZYME ACTIVITY is slow and does not stop. Flour’s proteases gradually break down the gluten network the autolyse was meant to help build. Over a normal rest that is negligible. Over many hours in a warm kitchen it is not, and a very long autolyse can leave a dough slack and sticky in a way that never fully recovers.
So the practical answer is a range with a reason attached: twenty to sixty minutes for white flour captures nearly all of the benefit. Wholemeal and rye benefit from longer, because bran and coarse particles hydrate more slowly — the extra time is buying hydration that white flour finished long ago.
