Golden syrup is cane sugar that has been partially INVERTED — the sucrose split into its two component sugars, glucose and fructose. That chemistry is the whole of what it does.

Invert sugars RESIST CRYSTALLISATION. A mixture of different sugars crystallises far less readily than a single one, which is why golden syrup keeps a caramel smooth, stops a fudge going grainy, and gives flapjacks and gingerbread a chewy rather than a sandy texture.

They are also more HYGROSCOPIC than sucrose. A bake made with golden syrup holds water and stays soft noticeably longer, which is much of why it appears in things meant to be kept.

And fructose BROWNS at a lower temperature than sucrose, so syrup-sweetened bakes colour earlier and darker.

Substituting golden syrup for sugar by weight is not arithmetic: it adds liquid, changes the texture toward chewiness, browns sooner and keeps softer. Those are usually the reasons for choosing it.

What changes if it is left out

Honey behaves similarly — hygroscopic, inverted, early-browning — and brings its own flavour and acidity. Corn syrup is the closest neutral equivalent. Ordinary sugar restores neither the chewiness nor the keeping.

What 'invert sugar' actually means, and why bakers care

Sucrose is one molecule made of a glucose and a fructose joined together. Inverting it splits that bond, giving a mixture of the two.\n\nThe consequence that matters is crystallisation. A saturated solution of a single sugar crystallises readily — which is what a grainy fudge or a seized caramel IS. A mixture of sugars interferes with its own crystal formation, so it stays smooth.\n\nThat is why a spoonful of golden syrup or glucose in a sugar syrup is such common professional practice, and why it looks like superstition until the mechanism is stated. It is not sweetening the mixture; it is preventing it from setting into crystals.
