Condensed milk is milk reduced to roughly two-fifths of its volume with sugar added at a level high enough to preserve it. The sugar is not a flavouring: it is the preservative, and it is why an unopened tin keeps at room temperature without sterilisation.

THE PRACTICAL CONSEQUENCE IS THAT IT IS NOT A LIQUID INGREDIENT. Substituting it for milk adds an enormous quantity of sugar to a formulation and removes most of the water — the two changes that most reliably wreck a batter. A cake made this way is sweeter, denser, darker and often greasy where the sugar has interfered with the structure.

IT IS ALSO WHERE MOST OF ITS BAKING USES COME FROM. In a fudge, a caramel, a tray-bake filling or a no-bake cheesecake, the sugar concentration is the point: it sets by concentration and by heat rather than by starch or egg, and the milk proteins brown readily under it.

EVAPORATED MILK IS THE OTHER TIN AND IS NOT INTERCHANGEABLE. It is the same reduction WITHOUT the sugar, so it behaves as a concentrated milk and can stand in for milk with water added back. The two tins look alike, sit beside each other, and produce completely different results; this is one of the most common substitutions people make by accident.

What changes if it is left out

Nothing straightforward. Where it is doing the setting — fudge, caramel, a no-bake filling — the recipe depends on both its sugar concentration and its low water content, and neither milk nor evaporated milk with added sugar reproduces it reliably without cooking down.

Storage and deterioration

An unopened tin is shelf-stable because of its sugar concentration rather than because of sterilisation alone. Once opened it is an ordinary perishable dairy product and belongs in the fridge.
