The emulsifiers used in bread are principally DATEM, sodium stearoyl lactylate, polysorbates, and mono- and diglycerides. They do two distinguishable jobs, and both are about starch and protein rather than about mixing oil with water in the everyday sense of the word.
The first is dough strengthening. A stronger dough tolerates being handled by machinery, holds more gas and yields a larger loaf — which is why emulsifiers and mechanical dough development appear together.
The second is crumb softening, and it is the one a shopper notices. Emulsifiers interact with starch in a way that slows the firming a loaf undergoes as it stales. This is a genuinely different thing from keeping the bread moist: the loaf is not wetter, it is less firm, because the starch recrystallisation that hardens a crumb has been slowed.

What changes if it is left out
Bread without them is entirely normal bread. It will stale faster, have a slightly smaller volume, and tolerate machine handling less well — which is why they are near-universal in packaged bread and near-absent in bread made at home or by a bakery selling on the day.
