A masonry oven is fired, allowed to burn down, and then bakes on stored heat — falling temperature, high thermal mass, a great deal of radiant heat from the walls and a floor hot enough to drive oven spring from below. Bread baked that way is baked in a declining oven, which suits a large loaf and does not suit anything needing a steady temperature.
