How to store baked things, and why the rules differ

Staling is two processes, not one — and which dominates decides how a thing should be kept, and why no single rule fits both a loaf and a biscuit.

How should each kind of baked thing be stored, and why does the advice contradict itself between products?

Staling is not drying out

This is the correction everything else depends on. A loaf sealed in a bag so that it cannot lose any water at all still goes stale, which means water loss cannot be the whole story.

Two separate things are happening. Starch that gelatinised during baking gradually re-orders itself as the bake cools and ages — retrogradation — and that structural change is what a firm, dry-feeling crumb actually is. Separately, water moves: outward from crumb to crust, and then from crust to the air.

Almost every piece of confusing storage advice comes from someone describing one of these and generalising it to both.

Why the fridge is the wrong answer for bread

Retrogradation proceeds fastest at chill temperatures above freezing. The fridge therefore sits close to the worst available temperature for bread: it makes the crumb firm faster than leaving the loaf on the worktop would.

The freezer works precisely because it takes the loaf through that range quickly and then holds it below it. Freeze bread you will not finish within a day or two, and slice it first — a whole frozen loaf thaws unevenly, while a frozen slice toasts directly.

The fridge does do one thing well: it slows mould. If mould rather than staling is your actual problem, refrigerating is a deliberate trade of texture for time rather than a mistake.

Why biscuits want the opposite of what bread wants

A crisp biscuit is drier than the air around it, so water moves INTO it and it goes soft. A loaf is wetter than the air, so water moves OUT of it and it goes hard.

The same physical process produces opposite symptoms, and therefore opposite storage. Biscuits need an airtight container to keep water out; bread needs covering to keep water in. Storing them together is the worst of both — the biscuits soften and the bread dries, each at the other’s expense.

Soft biscuits are a third case: they need an airtight container too, but to keep their moisture in rather than out. The container is the same and the reason is reversed.

What to do with each thing

Crusty bread you will finish today: cut side down on a board, uncovered. Sealing it ruins the crust, which is the part you went to the trouble for.

The same loaf tomorrow: wrapped or bagged. By then the crust is already lost and the crumb is what you are protecting.

Any bread beyond that: sliced and frozen.

Cake: covered, at room temperature. Most cakes are high enough in sugar and fat to keep several days, and both slow the perception of staling. Refrigerate only if the filling requires it — a buttercream does not, a fresh cream or custard filling does, and that is a food-safety decision rather than a texture one.

Crisp biscuits: airtight, alone. Soft biscuits: airtight, also alone.

Laminated pastry: eat it the day it is baked. There is no storage that preserves what makes it worth eating, and this is the one case where the honest advice is that there is no good answer.

Reheating, and why it works only once

Warming stale bread temporarily reverses part of the retrogradation, which is why a day-old loaf refreshed in the oven is genuinely better for a while.

The improvement is temporary and the bread stales faster afterwards. So refreshing is worth doing immediately before eating and is not a way of keeping bread — you get one useful go at it.

Quality, spoilage and safety are three different questions

Baking advice routinely blurs these, and they have different answers.

QUALITY is texture and flavour: staling, softening, crust loss. Nothing here is a safety matter, and stale bread is safe.

SPOILAGE is mould and off flavours. Visible mould on bread means the loaf goes — not the mouldy slice, the loaf, because in a soft moist crumb the growth extends beyond what is visible.

SAFETY concerns fillings rather than the bake. A cream-filled or custard-filled item needs refrigeration for reasons that have nothing to do with texture, and BakeHQ refers anything beyond that to the relevant food-safety authority rather than paraphrasing it.
