How many grams is a cup of flour, and why does every source give a different answer?

Water and milk DO convert cleanly, and that is worth saying

The refusal above is about flour and other powders. Liquids are a different case and the honest answer is different too.\n\nWater is close enough to one gram per millilitre for any kitchen purpose, so 250 ml of water is 250 g and no technique affects it. Milk is very slightly denser than water — enough to be measurable and not enough to change a bake — so treating it as one-to-one is fine.\n\nThe reason this works and flour does not is compaction. A liquid fills its container completely and cannot be packed loosely or tightly; a powder can, and that is the entire source of the disagreement between published flour conversions.\n\nThicker liquids sit between the two. Yoghurt, honey and syrups are denser than water and do not level cleanly in a measuring jug, so a volume measure of those carries real error even though they are liquids.

The question has no single answer, and that is the answer

A cup is a unit of volume and a gram is a unit of mass, so converting between them requires knowing the density of what is in the cup. For a liquid that is straightforward. For flour it is not, because flour is a powder that compacts.

How much flour fits in a cup depends on how it got there. Dipping the cup into the bag and levelling it packs the flour down; spooning flour into the cup and levelling it does not. The same cup, the same flour, the same person — and a substantially different weight.

That is why published conversions disagree with each other. They are not careless; they are measuring different techniques and reporting them as though they were the same measurement.

Why BakeHQ does not publish a converter for this

It would be easy to build and it would be wrong for most of the people who used it.

A converter returns a number, and a number carries an implied precision. Publishing “1 cup = X g” would mean asserting a technique the reader did not tell us about, and being confidently wrong for everyone who fills a cup differently. The honest version of the tool would return a range wide enough to be useless as a conversion.

So the architecture for ingredient-specific conversion exists in the calculator layer and no flour conversion is published through it. If a properly sourced density reference with a stated measuring technique becomes available, the conversion can be added with its assumptions attached. Until then, closing the search gap is not worth the false precision.

What this costs, in practice

Flour is the denominator of every ratio in a formula. Get it wrong and hydration, salt percentage and leavening percentage all move at once — which is why a volume-measurement error usually presents as several small problems rather than one obvious one.

It is the reason “too little flour” and “too much flour” are both modelled as causes in BakeHQ’s cookie faults, and why both trace back to the same root: a cup.

What to do instead

Weigh it. A digital scale removes the variable entirely, costs very little, and is the single change that most improves consistency in domestic baking.

If you are following a recipe written in cups and have no way to convert it, the practical approach is to be consistent rather than accurate: fill the cup the same way every time, so that at least your own results are repeatable and you can adjust from there.

And if a recipe gives both weights and cups, use the weights. The author measured one of them and calculated the other.
