Why gluten-free flour comes as a blend
No single gluten-free flour does what wheat flour does. A blend divides the work, and knowing which part does which job makes the results predictable.

Wheat is one material doing several jobs
Wheat flour supplies bulk, starch that gelatinises and sets, protein that forms a network, water absorption and flavour, all at once. Nothing gluten-free does all of that, so a blend assembles the same set of jobs out of several materials that each do one.
That is the entire reason blends exist. It is not that gluten-free flours are inferior — it is that they are specialised, and wheat is not.
What each component is for
A typical blend has three or four kinds of thing in it.
A NEUTRAL BULK FLOUR, usually rice, supplies most of the volume and most of the setting starch without contributing much flavour.
PURE STARCHES — tapioca, potato, maize — lighten the crumb and set it. Tapioca adds chew and browns better; potato starch softens and holds moisture. Neither contributes structure.
A PROTEIN-BEARING FLOUR, where present — sorghum, buckwheat, chickpea, oat — gives body, keeping quality and flavour, and absorbs considerably more water than the starches.
A HYDROCOLLOID, often already included, supplies gas retention. Whether your bag contains one is the single most useful thing to check, because adding more on top is the commonest route to a dense, gummy result.
Why two bags with the same label behave differently
Blend composition is not standardised. Two products both sold as 'gluten-free plain flour’ can sit at very different points on the starch-to-protein axis, and neither is wrong — they are aimed at different things.
A starch-dominant blend gives light, pale, tender results that suit cake and crumble in bread. A blend carrying substantial wholegrain flour gives denser, darker, better-keeping results that suit bread and can be heavy in a sponge.
So a formulation that works reliably with one bag can fail with another, and neither the recipe nor the baker is at fault. The ingredient list in descending order tells you where the blend sits; the words on the front do not.
Shifting the balance, and what it costs
Every adjustment here is a trade rather than an improvement.
More starch: lighter, paler, more tender, more fragile, stales faster.
More wholegrain or pulse flour: denser, darker, stronger flavoured, keeps better, needs more water.
More hydrocolloid: better gas retention up to a point, then less volume and a gummier crumb.
There is no setting that is correct in general, which is why BakeHQ publishes no blend formulation. A blend given without its intended product and hydration would be close to useless anyway — a mix suited to cake is not suited to bread.
Reading a bag well enough to predict it
Three questions answer most of it. What comes first in the ingredient list — a flour or a starch? Is there anything protein-bearing in there at all? And does it already contain xanthan, guar or another hydrocolloid?
Starch first with no protein flour and no gum: light, fragile, will need a binder for bread. Rice flour first with sorghum or buckwheat present and a gum already included: closer to a bread blend, and adding more gum will hurt.
That is enough to predict how a bag will behave before you have wasted anything on it.
