Salt is the one that changes the dough
Everything else on this page is flavour. Salt is not, and treating it as optional seasoning is the commonest reason a loaf comes out slack and over-fermented.\n\nIT SLOWS FERMENTATION. Salt raises the osmotic pressure of the dough, and yeast in a saltier environment works more slowly. A bread dough made without salt ferments noticeably faster and reaches its peak sooner — which is why an unsalted dough can be over-proved by the time the recipe says to bake it.\n\nIT AFFECTS THE DOUGH ITSELF. Bakers consistently report that a salted dough is tighter and less slack than an unsalted one, and the accepted explanation is an effect on how the gluten proteins interact. Salt-free bread is not bland in the way under-seasoned soup is bland; it tastes flat and faintly metallic, and most people find it unpleasant rather than neutral.\n\nA pinch of salt in a sweet bake is doing the third of these and not the first two. It sharpens perception of the other flavours, which is why cakes and biscuits carry a small amount even though nothing structural depends on it.
Does salt kill yeast? Only in the way that matters least
The instruction to keep salt away from yeast is real and it is routinely overstated in both directions.\n\nUNDILUTED SALT IN DIRECT, PROLONGED CONTACT with rehydrating yeast does damage it — the yeast cells lose water to the concentrated salt. That is the situation the warning describes, and it is worth avoiding: do not tip salt straight onto fresh yeast in a puddle of water.\n\nSALT DISPERSED THROUGH A DOUGH DOES NOT KILL YEAST. Every salted bread ever made is the evidence. What it does is slow fermentation, which is a rate effect and part of why the salt is there.\n\nSo neither absolute is right. “Salt kills yeast” frightens people out of using enough of it; “salt never harms yeast” loses a real handling point. The honest version names the concentration and the contact.
Vanilla, and whether it is doing anything
Vanilla is flavour, and it is flavour with an unusual property: it is largely a background note that makes other things taste more like themselves. That is why it appears in bakes that do not taste of vanilla, and why leaving it out of a chocolate cake makes the chocolate read as flatter rather than making the cake taste of less vanilla.\n\nEXTRACT AGAINST ESSENCE is a genuine distinction and not a grade. Extract is made by steeping vanilla in alcohol and carries the full set of aromatic compounds; essence in most markets is synthesised, usually dominated by a single compound, and tastes narrower. Neither behaves differently in a batter — the difference is entirely what you taste.\n\nMOST OF IT IS VOLATILE, which is the practical consequence worth knowing. A long, hot bake drives off more of the aroma than a short one, so vanilla is more noticeable in a custard or an icing than in a heavily-baked biscuit. It is not lost, but it is diminished.\n\nIs it necessary? Structurally, never. In an uncomplicated sweet bake it is doing recognisable work, and in a strongly flavoured one it is often unnoticeable.
Zest and spices: where the flavour actually lives
CITRUS ZEST IS THE OIL, not the fruit. The aromatic compounds are in the coloured outer layer of the peel and almost none of them are in the juice, which is why a lemon cake made with juice alone tastes sour rather than lemony. The white pith beneath carries bitterness and no aroma, which is the reason zesting is described as taking only the colour.\n\nZest also brings a little acid and essentially no liquid, so it can be added without adjusting anything. Juice brings a lot of both, and substituting one for the other changes the batter as well as the flavour.\n\nGROUND SPICES LOSE THEIR AROMA STEADILY once ground, because the volatile compounds carrying it escape from a much larger surface. A jar of cinnamon two years old is not spoiled and is markedly weaker, which is the usual explanation for a spiced bake tasting of nothing in particular.\n\nSome spices do more than flavour. Cinnamon in quantity can interfere with yeast activity, and heavily spiced enriched doughs ferment more slowly than the same dough without — a second reason hot cross buns take longer than bakers expect.
