Whipping cream does not simply beat air into it. Cream is fat globules suspended in water, each wrapped in a membrane. Beating shears those membranes open, and the partly solid fat inside sticks the globules to one another — they clump into chains, and those chains build a network around the air bubbles that the beating has introduced. The cream stiffens because a solid network has formed through it, not because it now contains air.

Two consequences follow immediately. It only works with enough fat, because there have to be enough globules for the chains to reach one another; single cream and most milks will foam briefly and never hold. And it only works cold, because the fat inside the globules has to be partly crystalline to stick — warm cream has liquid fat inside its globules and simply will not whip.

Keep going past the right point and the network does not stop forming. The chains coalesce into lumps, the water is squeezed out, and what is in the bowl is butter and buttermilk. There is no midpoint to return to.

What holds it together

A foam held by partial coalescence: fat globules whose membranes have been ruptured by shear, stuck to one another by partly crystalline fat, forming a network that surrounds and holds the air cells.

What temperature does to it

It must be cold, and the bowl and whisk should be cold too. Warm cream will not whip at all, because the fat inside the globules is liquid and liquid fat cannot hold globules together. Once whipped, warmth causes it to drain and collapse — which is why a whipped-cream filling that was perfect in the morning is a puddle by the afternoon in a warm room, and why cakes finished with it are refrigerated.

How it keeps

Hours rather than days, refrigerated, and it drains steadily throughout. Stabilising it — with a little gelatine, milk powder, mascarpone or a proprietary stabiliser — slows the drainage rather than stopping it. Cream that has drained can be whisked briefly back together once; it cannot be repeatedly.

Where it stops

Whipped cream is the least stable preparation in this family by a wide margin, and it is the wrong choice for anything that has to stand at room temperature, travel, or be made the day before. It cannot be piped in fine detail and will not hold an edge. It also will not whip from a cream much below a third fat — that figure is the trade convention rather than a threshold BakeHQ has read a measurement for, and it is stated as the practice it is. A lower-fat cream thickened with a stabiliser is a different preparation that happens to look similar.

Grainy cream is a warning, not a fault

The moment before whipped cream becomes butter, it looks very slightly granular — the surface loses its sheen and the texture reads as bitty rather than smooth.

That is worth recognising, because it is the last point at which anything can be done. Stopping there and folding in a couple of spoonfuls of unwhipped cream, by hand, will usually bring the texture back to something usable. Thirty seconds more of the mixer and the water will separate out and the batch is butter.

The practical consequence is to finish by hand. A mixer takes cream from soft peak to butter faster than most people can react, and the last ten seconds of whipping are the only ones that matter.
