Stand mixer
A motorised mixer that removes the labour from kneading and creaming, and introduces the possibility of over-mixing.

A stand mixer applies sustained mechanical work without fatigue, which is genuinely useful for stiff doughs, for long creaming, and for whisking egg foams.
It also makes two faults possible that are difficult to achieve by hand. Gluten can be over-developed to the point where the network breaks down, giving a slack and sticky dough that will not hold gas. And a dough worked hard by a machine heats appreciably, which accelerates fermentation and can push a dough past its window before the baker expects it.
Neither is a reason to avoid one. Both are reasons to watch the dough rather than the timer, which is the same advice that applies to hand kneading and is simply easier to ignore when a machine is doing the work.

What works instead
Hand kneading develops any dough a domestic mixer can, given time. Stretch and fold develops wet doughs that a mixer handles poorly. For egg foams, a hand-held electric whisk does the same job for a fraction of the cost and space.
The specific bakes people ask about
MACARONS: not required, and the closest to genuinely wanting one. The meringue needs sustained whisking to a precise, stable stage, and a hand mixer does it perfectly well — it is a question of holding the machine for several minutes rather than of capability. Doing it by hand with a balloon whisk is possible and unpleasant.
ENRICHED DOUGHS such as cinnamon rolls and brioche: this is where a mixer earns its place. Butter has to be worked into a developed dough over a long period, the dough is slack and sticky, and hand-kneading it is genuinely hard work rather than merely tedious. Still not required — bakers did it for centuries — but the gap is real.
SOURDOUGH AND LEAN BREAD: not required and often the wrong tool. These doughs are usually too wet for a domestic mixer to handle well, and the fold-at-intervals schedule most sourdough is built around develops gluten with almost no mechanical work.

Do you need one for bread or sourdough?
For sourdough, no — and a mixer is often the wrong tool. Sourdough is usually made at a hydration that a domestic mixer handles badly, and the folding schedule most sourdough is built around exists precisely because these doughs develop well with almost no mechanical work.
For ordinary bread it saves effort and changes nothing about the result. A hand-kneaded dough and a machine-kneaded dough arrive at the same place, and the hand-kneaded one is more reliably judged because the dough is being felt continuously.
There are two cases where the machine genuinely changes what is achievable rather than only how tiring it is: very enriched doughs such as brioche, where butter must be worked into a developed dough over a long period, and sustained whisking of a foam. Everything else is convenience.
