Xanthan gum vs guar gum

Two thickeners with different molecules and different behaviour, routinely sold as substitutes for one another.

The short answer

Xanthan works through a rigid rod-like molecule that makes solutions strongly shear-thinning; guar works mainly by raising viscosity and binding water. They are not interchangeable by weight, and combining them with a third hydrocolloid can produce a result better or markedly worse than either alone.

Combinations are not additive

The most useful finding here is not about either gum on its own. In one study at 2% total hydrocolloid on flour weight, two blends built on the same base ingredient produced opposite outcomes — the best and the worst bread in the set.

That is enough to establish that combination effects are real and can go either way. It is not enough to recommend any particular pairing, and BakeHQ recommends none.
