Wholemeal flour vs white flour
The bran and germ are the whole difference, and what they change most is not fibre — it is where the water goes.
The short answer
Wholemeal contains the bran and germ that white flour has had removed. For a baker the consequence is a water competition rather than a nutritional one: bran binds water strongly, so a wholemeal dough behaves as though it is drier than its stated hydration and its gluten network forms less easily. The germ’s oil also means wholemeal keeps far less well.

The misconception worth correcting
The popular explanation — a misconception, and one BakeHQ published and then corrected — is that bran fragments are sharp and physically cut the gluten strands. A controlled study tested that directly, using inert particles of comparable size with no water-binding capacity, and found they barely changed the bread.
The dominant effect is WATER COMPETITION, with gluten dilution and some plasticising alongside it. That is not a pedantic distinction: it changes what you do about it. If the rejected explanation were right and bran were cutting the network, the only remedy would be to remove the bran. Because it is taking water, the practical answers are more water, a soaker or an autolyse that lets the bran hydrate before the gluten needs the water, and a longer development.
BakeHQ corrected its own page on this in Sprint 13 and holds the correction with a validation rule, because the rejected explanation is repeated so widely that anyone writing from general knowledge reintroduces it.
