Natural vs Dutch-process cocoa

One is acidic and one has been alkalised. That changes colour, flavour and the leavening chemistry — but not in the tidy way the usual rule claims.

The short answer

Natural cocoa is acidic; Dutch-process has been treated with alkali, raising its pH toward neutral or above. That genuinely changes colour, flavour and what acid is available to a bicarbonate-based leavener. What it does NOT support is the rule that natural always needs bicarbonate and Dutch always needs baking powder — most real formulas contain several acid and base sources, and the cocoa is only one of them.

Differences that do not matter

These are real distinctions that are unlikely to change your decision. They are listed so you can stop thinking about them rather than left out so the comparison looks decisive.

Why the popular rule is too simple

The rule says natural cocoa pairs with bicarbonate of soda and Dutch-process pairs with baking powder, because the leavener needs an acid and only natural cocoa provides one.

The chemistry behind that is real. The rule built on it is not reliable, because a formula rarely has only one acid source. Buttermilk, brown sugar, yoghurt, soured cream, honey and treacle are all acidic, and baking powder brings its own acid. A recipe using Dutch cocoa AND buttermicilk AND bicarbonate is perfectly coherent, and the rule would call it broken.

The useful version is narrower: swapping one cocoa for the other changes the acid balance of the formula, and whether that matters depends on what else is in it. Where bicarbonate is the only leavener and cocoa is the only acid, the swap matters a great deal. Where baking powder is doing the work, it mostly changes colour and flavour.
