Instant yeast vs active dry yeast
Two dried yeasts that differ mainly in particle size and whether they need rehydrating — and are closer to interchangeable than the packaging suggests.
The short answer
Both are dried Saccharomyces cerevisiae. Instant is milled finer and dissolves straight into flour; active dry has larger granules and was traditionally rehydrated first, though many modern products no longer require it. In practice they are close enough that swapping them is one of the safer substitutions in baking — the real differences are handling and shelf behaviour, not leavening power.

What matters more is the rehydration step. Using active dry straight into flour when the product asks for rehydration will slow the ferment noticeably, and that is a bigger effect than a 20% weight difference. Read the packet.
